Mikava Estates is an exclusive competition coffee. Farmer Paul Doyle makes his mark by harvesting and processing high-end and rare coffee finds. His creations are meticulous, curated, and satisfyingly complex achieved through a Carbonic Maceration, and ultra-extended fermentation has gotta give. We love how it balances sweetness with some pleasant acidity with notes of black cherry, cacao nibs, and green apple. Have it filtered and have it slow.
